Zweet Zucchini Bread Recipe

We're a little sad that the summer squash season has come to an end. And although we can buy zucchinis all year round, there's just something special about in-season veggies. Zucchinis are great to cook with and we can attest to its versatility in savory recipes (we've even tried making pizza crust out of it just to try it), but it's also great to use in baking - the moisture, texture, and taste can't be beat. Give this zweet zucchini bread a try, and if you're up for the extra sweetness that a glaze can give it, we've added a recipe for a zucchini bread glaze that you can add on part, or all of your zweet zucchini bread.

Before You Get Started Making Zweet Zucchini Bread


Measure/Weigh all the ingredients
Grease/flour two 8 x 4 inch loaf pans
Preheat oven to 325 degrees (F)

Zweet Zucchini Bread Ingredients And Amounts (Yields two 8 x 4 inch loaf pans)


2 cups grated zucchini (about 2 small or 1 medium zucchini)
3 cups (420g) all-purpose flour
1 tsp (5g) salt
1 tsp (5g) baking soda
1 tsp (4g) baking powder
3 (150g) eggs
1 cup (224g) safflower oil or vegetable oil
1 tbsp (13g) vanilla extract
2 cups (400g) granulated sugar
1 tbsp (6g) cinnamon

Zweet Zucchini Bread Step-By-Step Directions


1) Preheat oven to 325 degrees (F). Grease/flour loaf pans.

2) Grate two cups of zucchini in a bowl and set aside.

3) In a separate bowl, sift flour, salt, baking soda, and baking powder. Set aside.

4) In a mixing bowl, whisk together the eggs, oil, and vanilla.

5) Add in the sugar and cinnamon, mix well with a spoon or spatula.

6) Add in dry ingredients from Step 3 slowly, mix well until all is incorporated.

7) Grab the zucchini set aside from Step 2 and mix well into the batter.

8) Divide the zucchini dough between the two loaf pans, filling them about 2/3rd's full.

9) Bake for 50-70 minutes, until a toothpick comes out clean. Let the bread cool in the pan for 20-30 minutes. Remove from pan and cool on a cooling rack.

Zweet Zucchini Bread Glaze Ingredients


1 1/2 tbsp (21g) unsalted butter
1 1/2 tbsp (22g) milk
1/2 tsp (3g) vanilla extract
1/2 cup (57g) powdered sugar

Zweet Zucchini Bread Glaze Step-By-Step Directions


1) In a saucepan over medium heat, melt butter.

2) Remove saucepan from the heat, add in milk and vanilla. Mix well.

3) Pour in powdered sugar and mix well with a spatula. Sift powdered sugar if you don't want any lumps in the glaze.

4) Pour glaze over warm zucchini bread.

You may keep bread out at room temperature for up to 2 days, or in the refrigerator for a week. Make sure to cover with aluminum foil, plastic wrap, or keep in a covered container
You can freeze zucchini bread for up to 2 months. Make sure to wrap tightly in aluminum foil or plastic wrap and place in a freezer bag to ensure freshness
