Vanilla Bean Lollipops Recipe

Vanilla bean lollipops have a delicious vanilla flavor with a light caramel taste. If you thought it was impossible to make your own candy at home, think again, because all it takes is a few ingredients, an eye for reading a thermometer, and some good ol' fashioned confidence. Once you perfect these, just think of all the different flavors of lollipops you can make. You ready to open the door to candy making... let's get started then.

Before You Get Started Making Vanilla Bean Lollipops


Measure/Weigh all the ingredients
Prepare about 20 lollipop sticks on a silicone mat or on aluminum foil that has been greased with baking spray
You'll need a spouted pyrex dish to pour the lollipops - grease it with baking spray and set aside

Vanilla Bean Lollipops Ingredients and Amounts (Yields ~20 on lollipop sticks)


2 tbsp (30g) heavy cream (aka heavy whipping cream)
2 tsp (10g) vanilla bean paste
1 cup (200g) granulated sugar
1/8 tsp (big pinch) salt
1/8 tsp (big pinch) cream of tartar
1/2 cup (118g) water
1/3 cup (109g) light corn syrup

Vanilla Bean Lollipops Step-By-Step Directions


NOTE: Read all the steps before proceeding.

1) Combine heavy cream and vanilla bean paste in a bowl and set aside.

2) In a heavy saucepan, combine water, sugar, light corn syrup, cream of tartar, and salt on medium-high heat. Stir until the sugar dissolves and starts to boil.

3) Once the sugar/water begins boiling, place the candy thermometer in and stop stirring.

4) When the liquid reach 295 degrees (F), take off the heat and let it rise to 300 degrees (F).

5) Let the mixture sit until the bubbling slows down, then whisk in the cream/vanilla bean paste from Step 1 (We highly recommend wearing a hand mitt while whisking as the sugar is very hot and does bubble up).

6) Pour the mixture into a greased spouted pyrex dish and slowly pour the mixture over the lollipop sticks in a circular motion until you reach the size of your choice.

7) Let the lollipops set for at least an hour.

It is important that you use a candy thermometer to keep track of the temperature, as different temperatures have different stages of hardening
You can enjoy these lollipops the day of making or wrap them in clear candy bags and give them away as treats
Unfortunately, hotter weather and high humidity can affect the lollipops. We noticed that making them in the summer required a longer hardening time and the lollipops stayed a bit sticky. As such, they were still delicious ;)
