Sesame Crisp Bars Recipe

Sesame crisp bars are nutty, sweet bars, with tons of crunch in every bite. These bars are sure to delight true sesame fans and can quite possibly turn non-sesame lovers into converts. Since sesame seeds are not utilized in baking too often, we suggest everyone giving these simple bars a shot. If sesame seed paste is just not your thing, then feel free to swap it with peanut butter for a different flavor altogether... we still guarantee deliciousness.

Measure/Weigh all the ingredients
Line a 9-inch square baking dish with parchment paper

Sesame Crisp Bars Ingredients and Amounts (Yield varies based on size of cuts)


1 1/4 cups (173g) sesame seeds
1/2 cup (114g) unsalted butter
1/2 cup (170g) honey
1/2 cup (100g) sugar
1 tbsp instant coffee powder
1/2 cup (115g) tahini (sesame seed paste)
5 cups (125g) Rice Krispies or puff cereal

Sesame Crisp Bars Step-By-Step Directions


1) Begin by toasting the sesame seeds. In a dry frying pan on medium heat, add the sesame seeds and stir occasionally until the seeds are golden. Watch a video on how to toast sesame seeds here.

2) Once the sesame seeds are toasted, spread them out onto a baking sheet and let them sit until cool.

3) In a large saucepan, combine butter, honey, sugar, coffee powder, and tahini, and bring all the ingredients to a boil.

4) Remove the pan from the heat and add the puff cereal and the toasted sesame seeds. Mix well.

5) Pour the mixture into the parchment lined pan you prepared and press the mixture down slightly with your hands or with the bottom of a cup (be careful when touching if mixture is still hot).

6) Cool the sesame crisps to room temperature. You can place them in the freezer or refrigerator to cool faster. Once cool, holding onto the parchment paper, remove the bars from the pan, and cut the sesame crisps into bars, or squares, and enjoy.

If you're not a fan of tahini, substitute it with peanut butter
If you're using instant coffee granules instead of the powder, try to crush the granules as best you can or whizz them in a coffee grinder or food processor. The finer the granules are, the better it will be incorporated into the mixture
