Mascarpone Filling Recipe

Mascarpone is an Italian cheese that is famously used in one of our favorite desserts, Tiramisu. Mascarpone is light in texture and mild in flavor, but really adds something special when used as a filing. Feel free to use this mascarpone filling as a frosting, but just keep in mind that it's a bit thinner than most frostings, which means it might be a little more difficult to frost with. But regardless if you use it as a frosting or a filling, this would be absolutely delicious on/in any cake. And if you're a fan of cream cheese frosting, than this filling will definitely tickle your fancy.

Before You Get Started Making Mascarpone Filling


Take butter, cream cheese, and mascarpone cheese out of the refrigerator to come to room temperature

Mascarpone Filling Ingredients And Amounts (Yields ~4 cups)


1 cup (227g) unsalted butter - softened at room temperature
1 cup/8oz (227g) cream cheese - softened at room temperature
2 cups (230g) confectioners sugar (powdered sugar)
1 tsp (4g) vanilla extract/vanilla bean paste
pinch of salt
1 cup/8oz (226g) mascarpone cheese - room temperature

Mascarpone Filling Step-By-Step Directions


1) Sift the powdered sugar in a bowl and set aside.

2) In the bowl of a stand mixer fitted with the paddle attachment (or mixing bowl if using handheld mixer) mix the butter and cream cheese on medium speed for 1 minute.

3) Add the sifted powdered sugar into the mixing bowl on low, once incorporated, turn mixer up to med-high speed and mix for 3 minutes until light and fluffy.

4) Next, on low speed, add the pinch of salt and vanilla and mix for 15-20 seconds.

5) Lastly, add in the mascarpone cheese by hand, folding it in just until incorporated. Excessive mixing can result in a curdled filling.


Mascarpone Filling Sweet Notes


Use this mascarpone filling recipe as a frosting as well. It's a bit thinner than most frostings, but it's a delicious choice
Use vanilla bean paste if you like the speckled bean look in your filling
