Kolacky Cookies Recipe

Kolacky, Kolache, Kolachy... there are so many different spellings for this delicious cookie. But regardless of how you spell it, a Kolacky is a soft pastry filled with a fruit-based filling. Making Kolackys is a yearly tradition in the Sweet Society family, and although we tend to make these during the holidays every year, they really are perfect for any time or occasion. The cookie itself is made of a rich cream cheese dough, then filled with a variety of fruit fillings, and topped with a sprinkling of powdered sugar. When you start eating these, it's hard to stop at just one.

Before You Get Started Making Kolacky Cookies


Measure/Weigh the ingredients
Grab your baking sheets
Take butter and cream cheese out of refrigerator to come to room temperature
Preheat oven to 350 degrees (F)

Kolacky Cookies Ingredients And Amounts (Yields ~ 40 Cookies)


2 & 1/4 cup (315g) all-purpose flour
1/2 tsp (3g) salt
1 cup (227g) unsalted butter - room temp
8 oz (226g) cream cheese - room temp
1/4 tsp (1g) vanilla extract
12.5 oz fruit filling (such as Solo Brand)

Kolacky Cookies Step-By-Step Directions


1) Preheat oven to 350 degrees (F).

2) In a bowl, sift the flour and salt and set aside.

3) In the bowl of a stand mixer fitted with the paddle attachment, combine butter and cream cheese on medium speed until fluffy.

4) Next, add in the vanilla and mix until incorporated.

5) Lastly, turn the mixer on low speed and add the flour/salt from Step 2 in four additions. Mix on low until the dough is completely incorporated.

6) Wrap dough in plastic wrap and place in fridge for 30 min to 1 hour to chill.

7) Once the dough is chilled, break off a section of the dough and roll it out with a rolling pin on a floured surface.

8) Sprinkle a bit of flour on top of the dough so the rolling pin doesn't stick, and roll the dough very thin - less than 1/8th of an inch.

9) Using a pizza cutter, cut 3x3 inch squares and place the remaining scraps of dough back into the dough pile.

10) Put about 1/2 to 1 tsp of fruit filling into the middle of the square.

11) Fold one corner over to the middle of the square, and then fold the opposite corner over and pinch shut. Place on baking sheet about 1 inch apart. Repeat with remaining dough.

12) Bake for 15-20 minutes until delicately golden brown on the edges.

13) Place Kolackys on a cooling rack. Once cooled, use a sifter and sprinkle some powdered sugar on top.

Kolacky Cookies Sweet Notes


There are many variations in which you can make these Kolacky cookies. If rolling out dough is not your kinda thing, another option is to roll a bit of dough into a ball, push your thumb into the middle of the ball to make an indentation, and place the filling into the indention. Bake as directed above. Cooking times may vary
There are many variations of Solo brand fruit fillings, as well as fresh fruit filling, so feel free to try whatever you prefer. Our personal favorite is strawberry, but we also love poppy seed :)
