It can be very frustrating when trying to get your royal icing black if you've never done it before. We use the americolor gel color super black and prefer americolor over some other brands. The trick is to color your royal icing to an almost black color, and let it sit a day or two in the fridge. The color will intensify after having some time to sit. We usually make black and red colors two days before we need it, and add more gel color as needed. Just so you know, you can keep royal icing in the fridge and take it out as needed - just make sure you let it come to room temp before piping
There are many royal icing recipes out there. Some use fresh egg whites, others pasteurized egg whites, but we like to use recipes that utilize meringue powder as the main ingredient. Meringue powder is a dried egg white powder that we use in place of fresh eggs, mainly because it's easy, tastes great, and we know is bacteria free
